  • 1/2 cup Greek yogurt
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups oat flour
  • 1 scoop vanilla whey protein powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp pumpkin spice
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F and line a muffin tin with liners.
  2. In a bowl, mix pumpkin purée, Greek yogurt, eggs, honey, and vanilla.
  3. Add oat flour, protein powder, baking powder, baking soda, pumpkin spice, and salt. Stir until combined.
  4. Divide batter evenly into muffin cups.
