Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 Celsius). Remove the silver skin from the pork tenderloin using a sharp knife.
  2. In a small bowl, combine the minced garlic, chopped rosemary, thyme, salt, pepper, and paprika to create the herb rub.
  3. Rub the olive oil all over the pork tenderloin. Then, press the garlic herb mixture evenly onto all sides of the pork.
  4. Place the seasoned pork tenderloin in a roasting pan or on a rimmed baking sheet. If using Dijon mustard, brush it lightly over the seasoned pork now.
  5. Roast the pork tenderloin for 20 to 25 minutes. For a truly juicy pork tenderloin, use a meat thermometer and remove the pork when the internal temperature reaches 140 degrees Fahrenheit (60 Celsius).
  6. Remove the pork from the oven and transfer it to a cutting board. Tent it loosely with foil and let it rest for 10 minutes. The internal temperature will rise to a safe 145 degrees Fahrenheit (63 Celsius) during this time, guaranteeing a tender roast pork loin.
  7. Slice the pork tenderloin into medallions about 1/2 inch thick. Serve immediately with your favorite side dishes.
