1/2 cup finely chopped pecans, plus 1 cup for coating

1/4 teaspoon garlic powder

Instructions
Place the softened cream cheese in a large bowl. Beat with an electric mixer until smooth and creamy.
Add the well-drained crushed pineapple, 1/2 cup chopped pecans, green onion, garlic powder, onion powder, salt, and pepper to the cream cheese. If using, mix in the chopped ham or bacon now. Mix until all ingredients are just combined. Do not overmix.
Cover the bowl with plastic wrap and chill the mixture in the refrigerator for at least 2 hours, or until firm enough to shape. This chilling step is key for a good cheese ball.
Spread the remaining 1 cup of pecans on a shallow plate.
Remove the cheese mixture from the refrigerator. Shape the mixture into a ball using your hands or a rubber spatula.
Roll the cheese ball in the chopped pecans until it is completely coated.
Place the coated cheese ball on a serving plate. Cover loosely and chill again for at least 1 hour before serving.
