Ingredients
Scale
4 large bell peppers (any color, halved lengthwise and seeded)
1 tablespoon olive oil
1 pound thinly sliced steak (ribeye or sirloin)
1 medium yellow onion, thinly sliced
8 ounces cremini mushrooms, sliced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon dried oregano
4 ounces cream cheese, softened
4 slices provolone cheese (or 1/2 cup shredded provolone)
1/4 cup beef broth
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking dish large enough to hold the pepper halves.
Place the pepper halves cut-side up in the prepared baking dish.
Heat the olive oil in a large skillet over medium-high heat. Add the sliced steak and cook until browned, breaking it up with a spoon. Remove the steak from the skillet and set it aside.
Add the sliced onion and mushrooms to the same skillet. Cook until the onions are soft and translucent, about 5 to 7 minutes.
Return the steak to the skillet. Stir in the salt, pepper, garlic powder, and oregano. Cook for 1 minute until everything is heated through.
Reduce the heat to low. Stir in the softened cream cheese and beef broth until the mixture is creamy and well combined. This creates your savory beef and steak filling.
Spoon the cheesesteak filling evenly into the bell pepper halves.
Top each stuffed pepper with a slice of provolone cheese.
Bake for 20 to 25 minutes, or until the peppers are tender and the cheese is melted and bubbly.
Serve immediately for a delicious, cheesy beef stuffed peppers meal.
Notes
For a slightly different texture, you can substitute half the steak with ground beef.
If you prefer a softer pepper, you can briefly steam or microwave the pepper halves for 3 minutes before stuffing them.
This recipe is naturally gluten free and keto friendly. If you want to make it a standard family meal, you can mix 1/2 cup of cooked white rice into the filling mixture.
