Bright, tangy lemon bars with a buttery shortbread crust, perfect for spring desserts.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix 1 cup flour, butter, and 1/4 cup powdered sugar to form the crust. Press into an 8×8-inch pan.
  3. Bake crust for 15 minutes until lightly golden.
  4. Whisk eggs, granulated sugar, 2 tbsp flour, baking powder, lemon juice, and zest until smooth.
  5. Pour filling over the baked crust and bake for 20-25 minutes until set.
  6. Cool completely, then dust with powdered sugar before slicing.

Notes

  • Use fresh lemon juice for the best flavor.
  • Chill bars before slicing for clean edges.
  • Store in the fridge for up to 5 days or freeze for longer storage.
