Ingredients
Scale
1 (14 ounce) can sweetened condensed milk
2 cups white chocolate chips
1 teaspoon peppermint extract
1/2 cup crushed candy canes, plus extra for topping
Instructions
Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the paper.
In a microwave-safe bowl, combine the sweetened condensed milk and white chocolate chips.
Microwave in 30-second intervals, stirring well after each interval, until the mixture is completely smooth and melted. This usually takes 1 to 2 minutes total. Do not overheat.
Stir the peppermint extract into the melted chocolate mixture until fully combined.
Gently fold in the 1/2 cup of crushed candy canes.
Pour the fudge mixture into the prepared pan and spread it evenly.
Sprinkle the top generously with extra crushed candy canes.
Refrigerate the fudge for at least 2 hours, or until firm enough to slice cleanly.
Use the parchment paper overhang to lift the fudge out of the pan. Slice into small squares.
For the best texture, store this fudge in an airtight container in the refrigerator.
Notes
For a beautiful swirl effect, reserve about 1/4 cup of the melted white chocolate mixture before adding the peppermint extract. After pouring the main fudge into the pan, drizzle the reserved white chocolate over the top, then gently swirl with a knife.
