  • 1 1/2 cups pecan halves, plus extra for topping
  • 1 cup light corn syrup
  • 1 cup packed brown sugar
  • 3 large eggs, lightly beaten
  • 1/4 cup (4 tablespoons) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Place your unbaked pie crust into a 9-inch pie plate.
  2. Arrange the 1 1/2 cups of pecan halves evenly over the bottom of the pie crust.
  3. In a medium bowl, whisk together the corn syrup, brown sugar, eggs, melted butter, vanilla extract, and salt until the mixture is smooth and well combined. This creates the rich, gooey pecan pie filling.
  4. Carefully pour the filling mixture over the pecans in the pie shell.
  5. Arrange the extra pecan halves decoratively on top of the filling, if desired.
  6. Bake for 50 to 60 minutes. The edges of the filling should look set, and the center should still have a slight jiggle when gently shaken. If the crust edges start to brown too quickly, cover them loosely with aluminum foil.
