Make the best, soft, and chewy peanut butter Rice Krispie treats. This easy, no-bake dessert adds creamy peanut butter for extra flavor and includes an optional chocolate topping for a truly irresistible snack.

Ingredients

Scale
  • 6 cups crispy rice cereal
  • 1 (10 ounce) package marshmallows
  • 3 tablespoons unsalted butter
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips (for topping)
  • 1 tablespoon coconut oil or butter (for topping)

Instructions

  1. Lightly grease a 9×13 inch baking pan or line it with parchment paper. Set aside.
  2. In a large saucepan over medium heat, melt the butter.
  3. Add the marshmallows to the melted butter and stir constantly until completely melted and smooth. This step is key for gooey treats.
  4. Remove the saucepan from the heat. Stir in the creamy peanut butter and vanilla extract until fully combined.
  5. Add the crispy rice cereal to the marshmallow mixture. Fold gently until the cereal is evenly coated. Do not overmix.
  6. Transfer the mixture to the prepared baking pan. Lightly press the mixture into the pan using a piece of wax paper or lightly buttered spatula. Avoid pressing too firmly to keep the treats soft and chewy.
  7. Prepare the chocolate topping: In a microwave-safe bowl, combine the chocolate chips and coconut oil (or butter). Microwave in 30-second intervals, stirring between each, until smooth.
  8. Pour or drizzle the melted chocolate evenly over the peanut butter cereal layer.
  9. Let the treats set at room temperature for about 1 hour, or chill briefly until the chocolate is firm.
  10. Cut into squares. Enjoy your homemade peanut butter squares!

Notes

  • For the chewiest texture, use fresh marshmallows and remove the pan from the heat immediately after the marshmallows melt before adding the peanut butter.
  • If you prefer a thicker layer of chocolate, double the topping ingredients.
  • These are great kid friendly no bake snacks for lunchboxes.
  • If you want fudgy peanut butter crunch bars, let the chocolate set completely before cutting.
