Instructions

  1. Prepare the Peach Filling: In a medium bowl, combine the drained peach slices, granulated sugar, cornstarch, cinnamon, and nutmeg. Gently mix until the peaches are coated. Stir in the vanilla extract. Let this mixture sit for 10 minutes to allow the flavors to meld.
  2. Assemble the Egg Rolls: Lay an egg roll wrapper on a clean, flat surface with a corner pointing toward you (like a diamond). Place about 1 tablespoon of the peach filling near the bottom corner. Fold the bottom corner up over the filling. Fold the left and right corners inward toward the center. Brush the top edge lightly with water to seal. Roll the egg roll tightly upward until sealed. Repeat with remaining filling and wrappers.
  3. Cook the Egg Rolls (Frying Method): Pour about 2 inches of vegetable oil into a deep skillet or pot. Heat the oil to 350°F (175°C).
