- 6 cups peeled and diced potatoes
- 1 small onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese
- 6 slices cooked bacon, crumbled
- 2 green onions, sliced
- Add potatoes, onion, chicken broth, salt, and pepper to the slow cooker.
- Cook on low for 6-7 hours or high for 3-4 hours until potatoes are tender.
- Mash potatoes slightly with a potato masher.
- Stir in heavy cream and butter until melted.
- Top with shredded cheddar, bacon, and green onions before serving.
