A creamy, rich potato soup made easy in your slow cooker for a comforting weeknight dinner.

Ingredients

  • 6 cups peeled and diced potatoes
  • 1 small onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 2 green onions, sliced

Instructions

  1. Add potatoes, onion, chicken broth, salt, and pepper to the slow cooker.
  2. Cook on low for 6-7 hours or high for 3-4 hours until potatoes are tender.
  3. Mash potatoes slightly with a potato masher.
  4. Stir in heavy cream and butter until melted.
  5. Top with shredded cheddar, bacon, and green onions before serving.

Notes

  • For extra creaminess, blend half the soup before adding toppings.
  • Try adding sour cream or chives for more flavor.
