A thick, cheesy copycat version of Panera’s famous broccoli cheddar soup, made in one pot for a comforting meal.

Ingredients

  • 4 cups broccoli florets
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup heavy cream
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 small onion, diced
  • 2 cups chicken broth
  • 1 cup milk
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add diced onion and cook until soft.
  3. Stir in flour to make a roux.
  4. Slowly whisk in chicken broth and milk.
  5. Add broccoli florets and simmer until tender.
  6. Stir in heavy cream and shredded cheddar until melted.
  7. Season with garlic powder, salt, and pepper.
  8. Serve hot, optionally in a bread bowl.

Notes

  • Use freshly shredded cheddar for better melting.
  • For extra creaminess, blend half the soup before adding cheese.
  • Pair with a crusty bread or salad for a complete meal.
