3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a 24-cup mini muffin tin.
In a large bowl, whisk together the flour, baking powder, salt, and sugar.
In a separate bowl, whisk the milk, egg, and melted butter together.
Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix; a few lumps are fine for fluffy pancake bites.
Spoon the batter into the prepared mini muffin cups, filling each about two-thirds full.
Bake for 8 to 10 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
Remove from the oven and let cool in the tin for a few minutes before transferring to a wire rack.

Notes
For a sweeter treat, add 1 teaspoon of vanilla extract to the wet ingredients.
