Make fun, bite-sized breakfast treats with this simple recipe for baked pancake poppers. These mini pancakes are perfect for quick snacks or fun breakfast appetizers.

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a 24-cup mini muffin tin.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. In a separate bowl, whisk the milk, egg, and melted butter together.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix; a few lumps are fine for fluffy pancake bites.
  5. Spoon the batter into the prepared mini muffin cups, filling each about two-thirds full.
  6. Bake for 8 to 10 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool in the tin for a few minutes before transferring to a wire rack.
  8. Serve your pancake poppers warm with your favorite toppings.

Notes

  • For a sweeter treat, add 1 teaspoon of vanilla extract to the wet ingredients.
