2 lbs Yukon Gold or Russet potatoes, scrubbed and cut into 1-inch pieces
Preheat your oven to 425°F (220°C). Place a large baking sheet in the oven while it preheats. Heating the sheet and oil helps achieve maximum crispiness.
Place the cut potatoes in a large pot and cover them with cold water. Add 1 teaspoon of salt. Bring the water to a boil and cook the potatoes for 5 to 7 minutes until the edges just start to soften. Do not overcook.
Drain the potatoes completely in a colander. Let them steam dry for 5 minutes. Gently shake the colander to rough up the edges of the potatoes; this creates more surface area for crisping.
In a small bowl, whisk together the melted butter, olive oil, minced garlic, salt, pepper, paprika, and garlic powder.
Carefully remove the hot baking sheet from the oven. Add the olive oil and butter mixture to the sheet and swirl to coat the pan.
Add the dried, roughed-up potatoes to the hot oil mixture on the baking sheet in a single layer. Do not overcrowd the pan; use two sheets if necessary.
Roast for 20 minutes. Flip the potatoes using a spatula.
Return to the oven and roast for another 15 to 20 minutes, or until they are deep golden brown and very crispy.
