1 pound boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon dried Italian herbs
1 small yellow onion, chopped
3 cloves garlic, minced
2 cups long-grain white rice, uncooked
4 cups low-sodium chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup fresh parsley, chopped (for garnish)
Instructions
Season the chicken pieces with salt, pepper, garlic powder, and Italian herbs.
Heat the olive oil in a large, deep pot or Dutch oven over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set it aside.
Add the chopped onion to the same pot and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Stir in the uncooked rice, coating it with the oil and onion mixture. Cook for 1 minute.
Pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 15 minutes, or until the rice is mostly tender and the liquid is absorbed. Do not lift the lid during this time.
Return the cooked chicken to the pot. Stir gently to combine.
Stir in the heavy cream and grated Parmesan cheese until the sauce is creamy. Cook uncovered for 2-3 minutes until heated through.
Remove the pot from the heat. Let it stand, covered, for 5 minutes before serving.
Garnish with fresh parsley before you serve your delicious one pot chicken and rice.
Notes
For an even richer flavor, use chicken thighs instead of breasts.
If you prefer a lighter meal, you can substitute half-and-half for the heavy cream.
