1 cup Kalamata olives, pitted and drained
1 cup green olives, pitted and drained
4 ounces cream cheese, softened
8 ounces feta cheese, crumbled
1/2 cup plain Greek yogurt
2 tablespoons extra virgin olive oil
1 clove garlic, minced
1 teaspoon dried oregano
1/4 cup fresh parsley, chopped
2 tablespoons lemon juice
Freshly ground black pepper to taste
Instructions
Roughly chop the Kalamata and green olives separately. Set aside a small amount of each for garnish later.
In a food processor, combine the softened cream cheese, crumbled feta, Greek yogurt, olive oil, minced garlic, oregano, and lemon juice.
Process the mixture until it becomes smooth and creamy. Stop and scrape down the sides as needed. This creates your whipped feta base.
Add most of the chopped olives to the food processor. Pulse a few times until the olives are incorporated but still have some texture. Do not over-process.
Stir in the chopped fresh parsley by hand. Season with black pepper.
Transfer the olive lovers dream dip to a serving bowl. Drizzle with a little extra olive oil and top with the reserved chopped olives.
Serve this briny dip for crackers, pita bread, or fresh vegetables.
Notes
For a richer flavor, use high-quality Greek feta packed in brine.
If you prefer a smoother texture, use only one type of olive or process all olives longer.
