Ingredients

Scale
  • 1 pound spaghetti, cooked and drained
  • 2 cups cooked, shredded chicken
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup milk
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 1/2 cup green onions, sliced (for topping)
  • 1/4 cup crushed tortilla chips (for topping)

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together the cream of chicken soup, cream of mushroom soup, sour cream, milk, salsa, chili powder, cumin, garlic powder, and onion powder until smooth. This sauce base is key for your creamy pasta.
  3. Add the cooked spaghetti and shredded chicken to the sauce mixture. Stir gently to coat everything evenly.
  4. Stir in 1 cup of the Monterey Jack cheese and 1 cup of the cheddar cheese into the spaghetti mixture.
  5. Pour the mixture into the prepared baking dish. Spread it out evenly.
  6. Top the casserole evenly with the remaining 1/2 cup Monterey Jack cheese and 1/2 cup cheddar cheese.
  7. Bake for 25 to 30 minutes, or until the casserole is bubbly and the cheese on top is melted and lightly golden.
  8. Remove from the oven and let it rest for 5 minutes before serving.
  9. Garnish with sliced green onions and crushed tortilla chips before serving. This dish pairs well with simple meal planning strategies.

Notes

  • For an even richer flavor, consider adding 1/2 cup of cooked, chopped green chilies to the sauce mixture.
  • If you prefer a less Tex-Mex flavor, substitute the salsa with 1/2 cup of reserved chicken broth and add 1/2 teaspoon of dried Italian herbs.
  • If you are looking for alternatives to traditional cooking, you can prepare the sauce components using a sous-vide precision cooker for consistency, though traditional stovetop mixing is faster for this recipe.
