Bake this incredibly moist blueberry bread featuring a rich, sweet cream cheese swirl. It is an easy quick bread perfect for breakfast or brunch.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup fresh or frozen blueberries
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 large egg yolk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy. Beat in the 2 large eggs one at a time, then mix in the vanilla extract.
  4. Beat in the sour cream or yogurt until just combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Gently fold in the blueberries.
  7. In a separate small bowl, beat the softened cream cheese, powdered sugar, and egg yolk until smooth. This creates your cream cheese swirl filling.
  8. Pour half of the blueberry batter into the prepared loaf pan. Drop small spoonfuls of the cream cheese mixture over the batter. Pour the remaining batter over the top.
  9. Use a knife or skewer to gently swirl the cream cheese mixture through the batter to create a marbled effect.
  10. Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
  11. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

  • If using frozen blueberries, do not thaw them; toss them with one tablespoon of flour before folding them into the batter to prevent sinking.
  • For a bakery style bread at home, you can drizzle a simple lemon glaze over the cooled loaf.
  • This tender loaf stays moist for several days when stored tightly wrapped at room temperature.
