  • 1 pre-made 9-inch graham cracker crust
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup butter, softened
  • 1 (8 ounce) container frozen whipped topping (like Cool Whip), thawed
  • 1 (8 ounce) can crushed pineapple, drained well
  • 1 cup chopped pecans
  • 1/2 cup flaked coconut (optional)

Instructions

  1. In a large bowl, beat the softened cream cheese, powdered sugar, and softened butter together until the mixture is smooth and creamy.
  2. Gently fold in the thawed whipped topping until just combined. Do not overmix.
  3. Fold in the well-drained crushed pineapple and the chopped pecans. If you are using coconut, fold it in now.
  4. Spoon the filling evenly into the prepared graham cracker crust.
  5. Cover the pie loosely with plastic wrap and chill in the refrigerator for at least 4 hours, or until firm. Chilling time is important for this make ahead dessert.
  6. Slice and serve your creamy pineapple pie cold.
