  • 8 ounces cream cheese, softened
  • 1 (14 ounce) can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans, plus extra for topping
  • 1 (8 ounce) can crushed pineapple, well drained
  • 1 cup frozen whipped topping (like Cool Whip), thawed
  • Extra chopped pecans for garnish

Instructions

  1. Prepare your graham cracker crust and set it aside.
  2. In a large bowl, beat the softened cream cheese until it is smooth.
  3. Gradually beat in the sweetened condensed milk and vanilla extract until the mixture is fully combined and creamy.
  4. Fold in the 1/2 cup of chopped pecans and the well-drained crushed pineapple. Mix gently.
  5. Fold in the thawed whipped topping until just combined. Do not overmix.
