Make this easy Mediterranean Steak Bowl for a healthy steak dinner idea. It features marinated flank steak, quinoa, fresh vegetables, and a simple lemon-herb dressing.

  • 1.5 lbs flank steak
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup quinoa, uncooked
  • 2 cups water or broth
  • 1 cup cherry tomatoes, halved
  • 1 English cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese (optional)
  • For Tzatziki Sauce: 1/2 cup plain Greek yogurt, 1/4 cup grated cucumber (squeezed dry), 1 tablespoon fresh dill, 1 teaspoon lemon juice

Instructions

  1. Prepare the marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, parsley, salt, and pepper.
  2. Place the flank steak in a resealable bag or shallow dish. Pour half of the marinade over the steak, reserving the other half for later. Marinate in the refrigerator for at least 30 minutes or up to 4 hours.
  3. Cook the quinoa: Rinse the quinoa. Combine quinoa and water or broth in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed. Fluff with a fork.
  4. Cook the steak: Heat a grill or cast-iron skillet over medium-high heat. Remove the steak from the marinade and cook for 4-6 minutes per side for medium-rare, depending on thickness. Let the steak rest for 5 minutes before slicing thinly against the grain.
  5. Make the Tzatziki Sauce: In a small bowl, combine Greek yogurt, squeezed cucumber, fresh dill, and lemon juice. Mix well.
  6. Assemble the bowls: Divide the cooked quinoa among serving bowls. Top with sliced steak, cherry tomatoes, diced cucumber, and sliced red onion.
  7. Drizzle the bowls with the reserved marinade (now acting as a light dressing) and a dollop of the Tzatziki sauce. Sprinkle with feta cheese, if using.

  • For a low carb mediterranean bowl option, substitute the quinoa with cauliflower rice.
