2 cloves garlic, minced
1 1/2 cups long-grain white rice (like Basmati or Jasmine)

2 1/2 cups vegetable broth
1/4 cup pine nuts
1/4 cup fresh parsley, chopped
2 tablespoons fresh cilantro, chopped
1 teaspoon lemon zest
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
Add the minced garlic, turmeric, cumin, salt, and pepper to the pot. Stir constantly for 1 minute until fragrant.
Add the rice to the pot and stir for 1 minute to coat the grains with the spices.
Pour in the vegetable broth. Bring the mixture to a boil, then immediately reduce the heat to low, cover the pot tightly, and simmer for 15 minutes without lifting the lid.
While the rice cooks, toast the pine nuts. Place the pine nuts in a small, dry skillet over medium-low heat. Cook, stirring often, until lightly golden brown, about 3 to 4 minutes. Remove immediately from the skillet.
After 15 minutes of simmering, remove the pot from the heat and let it stand, covered, for 10 minutes. Do not lift the lid during this resting time.
Fluff the rice gently with a fork. Stir in the chopped parsley, cilantro, lemon zest, and toasted pine nuts.
Serve immediately as a side dish or as the base for a grain bowl. This recipe is a great alternative to complicated meal planning systems.
Notes
