Ingredients
Scale
2 large pre-made naan breads or flatbreads
1 cup cooked, shredded grilled chicken
1/2 cup marinated artichoke hearts, drained and roughly chopped
1/4 cup sun-dried tomatoes, drained and chopped
1/2 cup crumbled feta cheese
1/4 cup thinly sliced red onion
2 tablespoons prepared pesto sauce
1 tablespoon olive oil
1 teaspoon dried oregano
Fresh parsley, chopped, for garnish
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly brush the flatbreads with olive oil and sprinkle with dried oregano.
Spread 1 tablespoon of pesto evenly over each flatbread. This forms the base for your greek style pizza.
Distribute the shredded grilled chicken over the pesto layer on both flatbreads.
Scatter the chopped artichoke hearts and sun-dried tomatoes over the chicken.
Top evenly with the sliced red onion and crumbled feta cheese.
Bake for 10 to 12 minutes, or until the crust is crisp and the cheese is slightly melted and golden.
Remove from the oven, slice immediately, and garnish with fresh parsley before serving your better-for-you fast food meal.
Notes
For an extra bright flavor, squeeze a little fresh lemon juice over the finished pizza.
You can use store-bought rotisserie chicken to save time on this quick weeknight dinner.
