  • 4 slices cheddar cheese, cut into quarters

Instructions

  1. Prepare the pancake batter: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are fine.
  4. Cook the sausage patties according to package directions. Once cooked, place one small piece of cheddar cheese on top of each hot patty to melt slightly.
  5. Prepare the griddle: Heat a non-stick griddle or large skillet over medium heat. Lightly brush with butter.
  6. To form the bites, pour small circles of batter (about 2 tablespoons each) onto the hot griddle.
  7. Immediately place a small piece of the cheesy sausage mixture onto the center of each pancake circle.
