Instructions

  1. Place the peeled and quartered sweet potatoes in a large pot and cover them with cold water. Add 1 teaspoon of salt to the water.
  2. Bring the water to a boil over high heat, then reduce heat to medium and cook until the potatoes are fork-tender, about 15 to 20 minutes.
  3. Drain the sweet potatoes completely. Return them to the hot, empty pot and let them sit for 2 minutes to allow excess moisture to evaporate. This step is key for creamy texture.
  4. While the potatoes dry slightly, gently warm the milk, butter, brown sugar, cinnamon, and nutmeg in a small saucepan until the butter is melted. Do not boil.
  5. Transfer the drained sweet potatoes to a large bowl. Use a potato masher or a hand mixer on low speed to mash them until mostly smooth.
  6. Gradually pour the warm milk and butter mixture into the potatoes while continuing to mash or mix until you reach your desired velvety consistency.
