4 boneless, skinless chicken breasts
1 tbsp olive oil
1/2 cup sun-dried tomatoes, chopped
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1 tsp Italian seasoning
1/4 tsp red pepper flakes
1/4 cup fresh basil, chopped
Salt and pepper to taste
Instructions
Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, then cook until golden, about 6 minutes per side. Remove and set aside.
In the same skillet, add sun-dried tomatoes and garlic. Cook for 1 minute until fragrant.
Pour in heavy cream and chicken broth. Stir in Parmesan, Italian seasoning, and red pepper flakes. Simmer for 5 minutes until slightly thickened.
Return chicken to the skillet and cook for another 5 minutes, coating it in the sauce.
Sprinkle with fresh basil before serving.
Notes
Serve with pasta or crusty bread to soak up the sauce.
For a lighter version, substitute half-and-half for heavy cream.
