A creamy, romantic chicken dish with sun-dried tomatoes and fresh basil, perfect for date night.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, then cook until golden, about 6 minutes per side. Remove and set aside.
  2. In the same skillet, add sun-dried tomatoes and garlic. Cook for 1 minute until fragrant.
  3. Pour in heavy cream and chicken broth. Stir in Parmesan, Italian seasoning, and red pepper flakes. Simmer for 5 minutes until slightly thickened.
  4. Return chicken to the skillet and cook for another 5 minutes, coating it in the sauce.
  5. Sprinkle with fresh basil before serving.

Notes

  • Serve with pasta or crusty bread to soak up the sauce.
  • For a lighter version, substitute half-and-half for heavy cream.
