Ingredients
Scale
12 large eggs
1 cup soy sauce
1 cup water
1/2 cup rice vinegar
1/4 cup granulated sugar
4 cloves garlic, minced
2 green onions, chopped
1 teaspoon sesame oil
1/2 teaspoon red pepper flakes (optional)
1 teaspoon toasted sesame seeds for garnish
Instructions
Gently place the eggs in a saucepan and cover them with cold water. Bring the water to a rolling boil over high heat.
Once boiling, immediately turn off the heat, cover the pot, and let the eggs sit for exactly 6 minutes and 30 seconds for jammy yolks.
Prepare an ice bath by filling a large bowl with ice and cold water. Immediately transfer the eggs to the ice bath to stop the cooking process. Let them cool completely, about 10 minutes.
Carefully peel the cooled eggs. Set aside.
Prepare the marinade: In a medium bowl or a sealable container, whisk together the soy sauce, water, rice vinegar, sugar, minced garlic, chopped green onions, sesame oil, and red pepper flakes (if using). Stir until the sugar dissolves.
Gently place the peeled eggs into the marinade. Ensure they are fully submerged. If necessary, use a small plate to keep them under the liquid.
Cover the container and refrigerate. Marinate the eggs for a minimum of 6 hours, but overnight is best for the deepest flavor.
When ready to serve, remove the eggs from the marinade and slice them in half. Drizzle with a little extra marinade and garnish with toasted sesame seeds.
Notes
For the best results and most addictive flavor, let these soy marinated eggs sit in the fridge for at least 12 hours.
These are fantastic for meal prep and will keep well in the refrigerator for up to one week.
If you are making these for ramen, consider using slightly less water in the marinade for a more concentrated flavor.
