Tender corn muffins sweetened with real maple syrup, perfect for breakfast or as a side dish.

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup maple syrup
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 egg

Instructions

  1. Preheat oven to 375°F and grease a muffin tin.
  2. Mix cornmeal, flour, baking powder, and salt in a bowl.
  3. In another bowl, whisk maple syrup, milk, melted butter, and egg.
  4. Combine wet and dry ingredients, stirring just until mixed.
  5. Divide batter into muffin cups and bake for 15-18 minutes.
  6. Let cool before serving.

Notes

  • Use room-temperature ingredients for even mixing.
  • Do not overmix to keep muffins tender.
  • Drizzle extra maple syrup on top for added sweetness.
