Make this flavorful mango teriyaki salmon for a quick, sweet and savory weeknight dinner. This recipe features a homemade glaze that balances tropical sweetness with classic teriyaki depth.

Ingredients

  • 4 (6 ounce) salmon fillets, skin on or off
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • For the Mango Teriyaki Glaze:
  • 1 cup fresh or frozen mango chunks
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup rice vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sriracha or chili garlic sauce (optional, for heat)
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
  • For Garnish:
  • 2 tablespoons chopped fresh cilantro
  • 1/2 lime, cut into wedges

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Pat the salmon fillets dry with paper towels. Season both sides lightly with salt and pepper. Place the salmon on the prepared baking sheet.
  3. Prepare the mango teriyaki glaze: Combine mango chunks, soy sauce, rice vinegar, brown sugar, ginger, garlic, and sriracha (if using) in a small saucepan.
  4. Bring the mixture to a simmer over medium heat, stirring occasionally. Cook for about 5 minutes until the mango softens slightly.
  5. Carefully transfer the sauce mixture to a blender or use an immersion blender. Blend until smooth. Return the sauce to the saucepan.
  6. Whisk the cornstarch slurry into the sauce. Bring the sauce back to a gentle simmer, stirring constantly until it thickens enough to coat the back of a spoon. This is your sticky salmon glaze.
  7. Brush about half of the mango teriyaki glaze over the tops of the salmon fillets. Reserve the remaining glaze for serving.
  8. Bake the salmon for 12 to 15 minutes, depending on the thickness, until it flakes easily with a fork.
  9. Remove the salmon from the oven. Brush the cooked salmon lightly with a little more of the warm reserved glaze.
  10. Garnish with fresh cilantro and serve immediately with lime wedges. This is a great healthy salmon dinner option.

Notes

  • For grilling, preheat your grill to medium-high heat. Grill the salmon for 4-6 minutes per side, brushing with the glaze during the last few minutes of cooking to prevent burning the sugar.
  • If you prefer pan-searing, sear the salmon skin-side down in a hot, oiled skillet for 4 minutes, flip, reduce heat, and cook for another 4-6 minutes, basting with the glaze during the last minute.
  • Serve this Asian glazed salmon over steamed jasmine rice or with a side of roasted broccoli for a complete meal.
