  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup tahini
  • 1/4 cup fresh lemon juice
  • 2 tablespoons water (or more, for thinning)
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Remove any loose outer leaves from the cabbage. Cut the head of cabbage vertically into four equal steaks, keeping the core intact to hold the layers together.
  3. Brush both sides of each cabbage steak lightly with olive oil. Season evenly with salt and pepper.
  4. Place the steaks on the prepared baking sheet. Roast for 20 to 25 minutes, flipping halfway through, until the edges are nicely charred and the cabbage is tender.
  5. While the cabbage roasts, prepare the dressing. In a small bowl, whisk together the tahini, lemon juice, water, minced garlic, and cumin until smooth. Add more water, one teaspoon at a time, until you reach a pourable consistency. Stir in the cayenne pepper, if using.
  6. Remove the roasted cabbage steaks from the oven. Arrange them on serving plates.
