Instructions
Combine the sugar, milk, butter, and salt in a medium saucepan. Heat over medium heat, stirring constantly until the butter is melted and the mixture reaches a full rolling boil. Let it boil without stirring for exactly one minute.
Remove the saucepan from the heat immediately. Stir in the peanut butter and vanilla extract until smooth.
Quickly stir in the lemon juice and lemon zest. The mixture may look slightly curdled; this is normal.
Add the rolled oats to the wet mixture and stir quickly until all the oats are coated.
