A low-carb, creamy chicken chili with a rich cream cheese base, perfect for keto diets and easy meal prep.

  • 2 lbs boneless chicken breasts
  • 8 oz cream cheese, softened
  • 1 can (4 oz) diced green chiles
  • 1 cup chicken broth
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro (optional)

Instructions

  1. Place chicken breasts in a slow cooker.
  2. Add cream cheese, green chiles, chicken broth, cumin, garlic powder, onion powder, paprika, salt, and pepper.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. Shred the chicken with a fork and stir well.
  5. Top with cheddar cheese and cilantro before serving.

Notes

  • For a stovetop version, cook chicken in a pot over medium heat, then add remaining ingredients and simmer for 20 minutes.
