Juicy Greek Lemon Chicken Marinade for Grilling or Baking

Create incredibly juicy and flavorful Greek chicken every time using this simple lemon and herb marinade. This recipe works perfectly for grilling, baking, or using in your favorite Greek Chicken Bowls.

  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons dried oregano
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 pounds boneless, skinless chicken breasts or thighs

Instructions

  1. In a medium bowl, whisk together the olive oil, lemon juice, oregano, minced garlic, thyme, salt, and pepper to create the marinade.
  2. Place the chicken into a large zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated well.
  3. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor. Do not marinate longer than 4 hours, as the lemon juice can begin to toughen the chicken.
  4. Preheat your grill to medium-high heat or preheat your oven to 400°F (200°C).
  5. Remove the chicken from the marinade, letting excess drip off. Discard the remaining marinade.
  6. If grilling, place chicken on the grates and cook for 6-8 minutes per side, until the internal temperature reaches 165°F (74°C).
  7. If baking, place chicken on a lined baking sheet. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Let the chicken rest for 5 minutes before slicing or serving.

Notes
