A hearty and comforting soup with smoky bacon, tender cabbage, and creamy potatoes, perfect for cold-weather dinners.

Ingredients

  • 6 slices bacon, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 cups potatoes, peeled and diced
  • 2 cups cabbage, shredded
  • 1 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp butter

Instructions

  1. Cook bacon in a large pot until crispy. Remove and set aside.
  2. In the same pot, sauté onion and garlic in butter until soft.
  3. Add chicken broth, potatoes, and cabbage. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes or until potatoes are tender.
  5. Stir in heavy cream, salt, and pepper. Simmer for 5 more minutes.
  6. Top with crispy bacon before serving.

Notes

  • Serve with crusty bread or shredded cheddar cheese.
  • For a lighter version, substitute half-and-half for heavy cream.
