Juicy Instant Pot Turkey Breast with Simple Pan Gravy

Cook a perfectly moist and tender turkey breast fast in your Instant Pot. This recipe is great for weeknight dinners or as a shortcut for holiday meals, complete with easy gravy made from the pot drippings.

  • 1 (3-4 lb) bone-in or boneless turkey breast
  • 1 cup chicken broth or water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • For Gravy: 2 tablespoons cornstarch
  • For Gravy: 1 cup reserved turkey drippings/broth

Instructions

  1. Pat the turkey breast dry using paper towels. Rub the entire surface with olive oil.
  2. In a small bowl, mix the salt, pepper, thyme, rosemary, garlic powder, and onion powder. Sprinkle this seasoning mix evenly over the turkey breast.
  3. Pour 1 cup of chicken broth or water into the inner pot of your Instant Pot. Place the trivet inside.
  4. Carefully place the seasoned turkey breast on the trivet, skin-side up.
  5. Secure the lid on the Instant Pot and set the valve to Sealing.
  6. Cook on High Pressure for 35 minutes for a 3-4 lb breast. (Adjust time based on weight; generally 7-8 minutes per pound).
  7. Once cooking is complete, allow a Natural Pressure Release (NPR) for 10 minutes, then carefully switch the valve to Venting to release any remaining pressure.
  8. Remove the turkey breast from the pot and place it on a cutting board. Tent loosely with foil and let it rest for 10 minutes.
  9. To make the gravy, carefully pour the liquid from the Instant Pot into a measuring cup, reserving at least 1 cup of the drippings/broth mixture. Skim off excess fat if desired.
  10. In a small bowl, whisk the cornstarch with 2 tablespoons of cold water until smooth.
  11. Pour the reserved liquid into the Instant Pot (or a saucepan if you prefer stovetop gravy). Bring the liquid to a simmer using the Sauté function.
  12. Whisk in the cornstarch slurry slowly until the gravy thickens to your liking.
  13. Slice the turkey breast against the grain and serve immediately with the homemade gravy.

Notes

  • For crispier skin, after resting the turkey, place it under your oven’s broiler for 3-5 minutes until the skin browns. Watch it closely to prevent burning.
  • If you are concerned about timing, use a meat thermometer; the turkey is done when it reaches 165°F in the thickest part.
  • This quick method is a great alternative to traditional roasting, offering results similar to what you might find with sous-vide precision cooker methods for moisture retention.
