2 slices sourdough bread

3 ounces sharp cheddar cheese, sliced or grated
1/2 small crisp apple (like Honeycrisp or Granny Smith), thinly sliced
1 tablespoon hot honey
1 teaspoon Dijon mustard (optional)
Instructions
Spread butter evenly on one side of each slice of sourdough bread.
Flip the bread slices over. On the unbuttered side of one slice, spread the Dijon mustard if you are using it.
Layer half of the cheddar cheese on the mustard-coated side.
Arrange the thin apple slices evenly over the cheese layer.
Drizzle the hot honey over the apples.
Top with the remaining cheddar cheese. Place the second slice of bread on top, butter-side up.
