Make juicy, flavorful Honey Garlic Chicken Skewers that impress guests or serve as a quick weeknight dinner. You can easily cook these crowd-pleasing skewers in the oven or on the grill.

  • 2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1/4 cup honey
  • 1/4 cup soy sauce (use low sodium if preferred)
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon ground black pepper
  • Vegetables for skewering (optional): bell peppers, red onion, pineapple chunks
  • Bamboo skewers, soaked in water for 30 minutes

Instructions

  1. If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a medium bowl, whisk together the honey, soy sauce, rice vinegar, sesame oil, minced garlic, ginger, and black pepper to create the marinade. This is your best chicken marinade for skewers.
  3. Place the cubed chicken into a resealable bag or shallow dish. Pour half of the honey garlic marinade over the chicken, reserving the other half for basting later. Toss to coat completely. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.
  4. Preheat your oven to 400°F (200°C) or prepare your grill for medium-high heat.
  5. Thread the marinated chicken pieces onto the soaked skewers, alternating with your chosen vegetables if using.
  6. For the Oven: Arrange the skewers on a baking sheet lined with foil or parchment paper. Bake for 15-20 minutes, brushing with the reserved marinade halfway through cooking.
  7. For the Grill: Place the skewers directly on the preheated grill grates. Grill for 10-14 minutes total, turning every 3-4 minutes, brushing with the reserved marinade during the last few minutes of cooking.
  8. Cook until the chicken reaches an internal temperature of 165°F (74°C) and the glaze is slightly caramelized.
  9. Remove from heat and let rest for 5 minutes before serving.

Notes

  • For extra flavor, thread pieces of bacon between the chicken chunks before grilling.
  • If you prefer a thicker glaze, simmer the reserved marinade in a small saucepan over medium heat for 3-5 minutes until it thickens slightly. Use this as a finishing sauce.
  • These skewers are fantastic made ahead; marinate the chicken the night before for an easy weeknight dinner.
