Ditch the cans and make this rich, comforting homemade cream of chicken soup from scratch. It is fast, uses simple pantry staples, and tastes much better than store-bought condensed soup. This recipe is perfect for weeknight dinners or as a base for your favorite casseroles.

  • 2 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1/8 teaspoon garlic powder
  • 2 cups chicken broth
  • 1 cup whole milk or half-and-half
  • 1 1/2 cups cooked, shredded chicken breast
  • 1/4 cup chopped onion (optional, for flavor base)

Instructions

  1. Melt the butter in a medium saucepan over medium heat. If using onion, add it now and cook until soft, about 3 minutes.
  2. Whisk in the flour, salt, pepper, thyme, and garlic powder. Cook this roux, stirring constantly, for 1 minute.
  3. Slowly whisk in the chicken broth until the mixture is smooth. Continue whisking and bring the mixture to a simmer. Let it cook until it thickens slightly, about 3 to 5 minutes.
  4. Reduce the heat to low. Gradually whisk in the milk or half-and-half until fully incorporated and the soup is smooth. Do not let it boil after adding the milk.
  5. Stir in the cooked, shredded chicken. Heat through for 2 to 3 minutes until the soup is hot.
  6. Taste and adjust seasonings if needed. Serve immediately as a standalone meal or use as a base for your favorite casserole recipes.

Notes

  • To make a condensed version for meal prep or storage, omit the 1 cup of milk/half-and-half and reduce the chicken broth to 1 cup. After thickening the base, stir in the chicken and cool completely before storing. Use 1 cup of this condensed base plus 1 cup of liquid (milk or broth) when ready to eat.
  • This soup freezes well. Cool completely before transferring to an airtight freezer-safe container.
  • For a richer flavor, use homemade chicken broth.
