High Protein Chicken Fried Rice

A quick, protein-packed fried rice with crispy garlic and fluffy egg ribbons, perfect for meal prep.

Ingredients

  • 2 cups cooked day-old rice (brown or white)
  • 1 lb chicken breast, diced
  • 3 eggs, beaten
  • 3 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a wok or large pan over medium-high heat.
  2. Add diced chicken and cook until no longer pink. Remove and set aside.
  3. In the same pan, scramble the eggs until fluffy. Remove and set aside.
  4. Add sesame oil and minced garlic to the pan. Sauté until fragrant.
  5. Add mixed vegetables and stir-fry for 2-3 minutes.
  6. Add cooked rice, breaking up any clumps. Stir-fry for 3-4 minutes.
  7. Return chicken and eggs to the pan. Add soy sauce and mix well.
  8. Season with salt and pepper. Cook for another 2 minutes.
  9. Serve hot or store for meal prep.

Notes

  • Use day-old rice for best texture.
  • Swap brown rice for extra fiber.
  • Add more vegetables for extra nutrients.
