1 pound ground beef
1 tablespoon olive oil
1 large onion, chopped
2 cloves garlic, minced
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes, undrained
4 cups beef broth
2 tablespoons paprika (use sweet or smoked)
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup elbow macaroni or small pasta shape
1/2 cup shredded cheddar cheese (optional, for topping)
Instructions
Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess fat.
Add the chopped onion to the pot with the ground beef and cook until softened, about 5 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Pour in the tomato sauce, diced tomatoes (with juice), and beef broth. Stir well to combine.
Add the paprika, oregano, salt, and pepper. Bring the mixture to a simmer.
Stir in the elbow macaroni. Reduce the heat to low, cover the pot, and cook for 12 to 15 minutes, stirring occasionally, until the pasta is tender and the liquid is mostly absorbed.
Remove from heat. If using, sprinkle the cheddar cheese over the top and cover for 2 minutes until melted. Serve hot.
Notes
For a richer flavor, use smoked paprika instead of sweet paprika.
