Juicy, char-marked chicken thighs marinated in coconut milk and fresh basil, perfect for summer BBQs or quick weeknight dinners.

  • 4 boneless, skinless chicken thighs
  • 1/2 cup coconut milk
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp brown sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Mix coconut milk, basil, garlic, soy sauce, lime juice, brown sugar, salt, and pepper in a bowl.
  2. Add chicken thighs to the marinade, coating evenly. Cover and refrigerate for at least 1 hour or overnight.
  3. Preheat grill to medium-high heat. Remove chicken from marinade, letting excess drip off.
  4. Grill chicken for 5-6 minutes per side, or until internal temperature reaches 165°F.
  5. Let rest for 5 minutes before serving.
