Make this incredibly moist banana bread using Greek yogurt instead of oil. It is a high-protein, easy recipe perfect for a healthy breakfast loaf or satisfying snack.

  • 3 large very ripe bananas, mashed
  • 1 cup plain Greek yogurt (full-fat or 2%)
  • 1/2 cup melted coconut oil or unsalted butter
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour (or whole wheat flour for a heartier loaf)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup mix-ins (optional: chocolate chips or chopped walnuts)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan, or line it with parchment paper.
  2. In a large bowl, combine the mashed bananas, Greek yogurt, melted oil or butter, brown sugar, eggs, and vanilla extract. Whisk until the mixture is smooth.
  3. In a separate medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  4. Add the dry ingredients to the wet ingredients. Mix gently with a spatula until just combined. Do not overmix; a few streaks of flour are fine.
  5. If using, fold in your chocolate chips or walnuts now.
  6. Pour the batter evenly into the prepared loaf pan.
  7. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.
  8. Let the banana bread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely before slicing.

Notes

  • For an extra boost of protein, you can substitute 1/4 cup of the flour with vanilla or unflavored protein powder. Adjust baking time slightly if you add protein powder.
  • Using very ripe, spotty bananas provides the best natural sweetness and moisture for this recipe.
  • This bread stays incredibly moist for days when stored in an airtight container at room temperature.
