Make this incredibly addictive Graham Cracker Toffee, often called Christmas Crack. It features a buttery, rich toffee layer over crisp graham crackers, topped with melted chocolate. This recipe is simple, requires minimal ingredients, and delivers a shatteringly crisp texture without needing a candy thermometer.

Ingredients

  • 1 sleeve (about 1315 sheets) graham crackers
  • 1 ¼ cups unsalted butter
  • 1 ¼ cups packed dark brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • ½ cup chopped pecans or walnuts (optional)
  • Flaky sea salt for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Arrange the graham crackers in a single layer on the prepared baking sheet, breaking them if necessary to cover the surface completely.
  3. In a medium saucepan, combine the butter and brown sugar. Bring the mixture to a boil over medium heat, stirring constantly. Once boiling, continue to cook for exactly 3 minutes, stirring occasionally. Do not overcook.
  4. Remove the saucepan from the heat and stir in the vanilla extract.
  5. Immediately pour the hot toffee mixture evenly over the graham crackers, spreading it quickly to coat all the crackers.
  6. Bake for 5 minutes. The toffee should look bubbly.
  7. Remove the sheet from the oven. Sprinkle the chocolate chips evenly over the hot toffee layer. Let it sit for 5 minutes to soften the chips.
  8. Spread the melted chocolate smoothly over the crackers. If using, sprinkle chopped nuts and flaky sea salt over the chocolate layer.
  9. Let the toffee cool completely at room temperature for at least 1 hour, or place it in the refrigerator for 30 minutes until the chocolate is firm.
  10. Break the cooled toffee into irregular pieces. Store in an airtight container.

  • For a quicker set, place the baking sheet in the freezer for 15 minutes after topping with chocolate.
