  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 tbsp olive oil
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 lb potato gnocchi
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned, about 5 minutes.
  2. Add carrots, celery, and garlic. Cook for 3 minutes.
  3. Stir in thyme, rosemary, salt, and pepper.
  4. Pour in chicken broth and heavy cream. Bring to a simmer.
  5. Add gnocchi and peas. Cook for 5 minutes, stirring occasionally.
  6. Sprinkle with Parmesan cheese before serving.

Notes

  • Use pre-cooked gnocchi for faster prep.
  • Swap heavy cream for half-and-half if preferred.
