  • 1 cup pumpkin puree
  • 3 eggs
  • 1 cup coconut milk
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/4 tsp ginger
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F.
  2. Grease a baking dish and place bread cubes in it.
  3. Whisk pumpkin puree, eggs, coconut milk, maple syrup, vanilla, and spices in a bowl.
  4. Pour mixture over bread cubes and let soak for 15 minutes.
  5. Bake for 40-45 minutes until set.
  6. Cool slightly before serving.
