  • 2 lbs baby potatoes, halved
  • 3 tbsp unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with melted butter, garlic, thyme, salt, and pepper.
  3. Spread potatoes in a single layer on a baking sheet.
  4. Roast for 30-35 minutes, flipping halfway, until crispy and golden.
  5. Sprinkle with fresh parsley before serving.
