Easy, flavorful meatballs in a rich garlic butter sauce, perfect for weeknight dinners or date nights.

Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp butter
  • 3 cloves garlic, sliced
  • 1/4 cup chicken broth
  • 1/4 cup heavy cream
  • 1/4 cup chopped parsley
  • 8 oz linguine, cooked

Instructions

  1. Mix beef, breadcrumbs, parmesan, egg, minced garlic, salt, and pepper in a bowl.
  2. Shape into 1-inch meatballs.
  3. Heat butter in a pan over medium heat. Brown meatballs on all sides, about 8 minutes.
  4. Remove meatballs. Add sliced garlic to the pan and cook for 1 minute.
  5. Pour in chicken broth and heavy cream, simmer for 2 minutes.
  6. Return meatballs to the pan, coat with sauce, and cook for 5 more minutes.
  7. Stir in parsley and serve over linguine.

Notes

  • For meal prep, cook meatballs ahead and reheat with sauce.
  • Check internal temp of meatballs—160°F is safe.
  • Pair with gluten-free pasta for a gluten-free meal.
