2 lbs frozen shredded hash brown potatoes, thawed
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1 cup shredded sharp cheddar cheese
1/2 cup milk
1/2 cup butter, melted
1/2 cup crushed cornflakes or crackers
1/4 cup grated Parmesan cheese (optional, for topping)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
In a large bowl, combine the thawed hash brown potatoes, cream of chicken soup, sour cream, cheddar cheese, and milk. Mix gently until everything is evenly coated.
Spread the potato mixture evenly into the prepared baking dish.
In a small bowl, mix the melted butter with the crushed cornflakes or crackers. Sprinkle this mixture evenly over the top of the potato casserole. If using, sprinkle Parmesan cheese over the topping.
Bake for 40 to 45 minutes, or until the casserole is bubbly and the topping is golden brown.
Let the cheesy potato casserole rest for 5 to 10 minutes before serving.
Notes
You can assemble this make ahead casserole the night before. Cover it tightly and refrigerate. Add about 10 minutes to the baking time if baking directly from the refrigerator.
