1/2 cup (120ml) melted coconut oil or butter
1 teaspoon vanilla extract
1/2 cup (100g) granulated sugar
1/2 cup (100g) packed light brown sugar
3/4 cup (75g) unsweetened cocoa powder
1/2 cup (60g) all-purpose flour
1/2 cup (60g) whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (85g) chocolate chips (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
Combine the cottage cheese and eggs in a high-speed blender or food processor. Blend until completely smooth, scraping down the sides as needed. This step is key for fudgy texture.
Add the melted coconut oil (or butter) and vanilla extract to the blender. Blend briefly to combine.
Add the granulated sugar and brown sugar to the blender mixture. Process until fully incorporated.
In a separate bowl, whisk together the cocoa powder, all-purpose flour, pastry flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients in the blender. Pulse just until combined. Do not overmix.
If using, gently fold in the chocolate chips by hand.
Pour the batter into the prepared baking pan and spread evenly. Sprinkle a few extra chocolate chips on top if desired.
Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter, for the best fudgy result.
