  • 4 large eggs

  • 1 cup powdered sugar, for rolling

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and 1 cup of the granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Place the remaining 1 cup of granulated sugar in one shallow bowl and the powdered sugar in another shallow bowl.
  7. Roll the dough into balls, about 1.5 inches in diameter. First, roll each ball thoroughly in the granulated sugar, then roll it completely in the powdered sugar until fully coated.
  8. Place the coated dough balls onto the prepared baking sheets, leaving about 2 inches between them.
  9. Bake for 10 to 12 minutes. The edges should look set, but the centers will still look slightly soft.
  10. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. The signature crinkle top will develop as they cool.
