A cozy one-pan casserole that transforms French onion soup flavors into a cheesy chicken-and-rice bake for easy weeknights.

Ingredients

  • 2 cups long-grain white rice
  • 4 boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cups chicken broth
  • 1 cup shredded Gruyère cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat butter and olive oil in a large oven-safe skillet over medium heat.
  3. Add onions and cook until caramelized, about 15 minutes.
  4. Add garlic, thyme, salt, and pepper. Cook for 1 minute.
  5. Stir in rice and chicken broth. Bring to a simmer.
  6. Place chicken breasts on top of the rice mixture.
  7. Cover and bake for 25 minutes.
  8. Remove cover, sprinkle cheeses on top, and bake for another 10 minutes until golden.

Notes

  • For a quicker meal, use pre-cooked chicken.
  • Swap Gruyère for Swiss cheese if needed.
  • Pair with a simple green salad for a complete meal.
