- 2 cups long-grain white rice
- 4 boneless, skinless chicken breasts
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups chicken broth
- 1 cup shredded Gruyère cheese
- 1/2 cup grated Parmesan cheese
- Preheat oven to 375°F (190°C).
- Heat butter and olive oil in a large oven-safe skillet over medium heat.
- Add onions and cook until caramelized, about 15 minutes.
- Add garlic, thyme, salt, and pepper. Cook for 1 minute.
- Stir in rice and chicken broth. Bring to a simmer.
- Place chicken breasts on top of the rice mixture.
- Cover and bake for 25 minutes.
- Remove cover, sprinkle cheeses on top, and bake for another 10 minutes until golden.
Notes
- For a quicker meal, use pre-cooked chicken.
- Swap Gruyère for Swiss cheese if needed.
- Pair with a simple green salad for a complete meal.
